Wings have a reputation for being simple. Crowd-pleasing but not serious. Something you order while you wait for the real food.

Niblets (or flats as you might know them), marinated in a bright, sharp blend of citrus, herbs, and warming spice. The marinade works on two levels — the acid from the citrus breaks down the surface of the skin, which means it crisps in a way that plain wings never do, while the heat from the chilli and the freshness of the herbs cut through the richness of the fat. The result is something that keeps you reaching back in without quite knowing why. Sharp. Moreish. Impossible to leave alone.

What makes these different

The citrus base is a combination of zest and slight heat. The wings go in for a minimum of 12 hours, which is long enough for the citrus to do its job without breaking the meat down.

The result cooks differently to most wings. The skin tightens and crisps faster at high heat, so you get texture and char without drying out the meat underneath.

These are the cut that goes first at every spread. Every time. Plan accordingly.

How to cook them

Gas grill: High heat, 4–5 minutes each side.

Open fire / coals: Direct heat, 3–4 minutes each side on the grill or skewer them.

Preheat Oven: 180°C fan, 18–20 minutes, turning halfway. Finish under the grill for 2 minutes each side for char.

A note on the underdog

Wings have spent decades being underestimated. They're the cut that gets ordered while people are waiting, the thing on the side of the menu, the crowd-pleaser that serious cooks don't take seriously. We've never understood that. The wing is one of the most flavourful cuts on the bird. More fat, more surface area for a marinade to work with. When you treat it with the same care you'd give a prime cut, it rewards you in ways that politer, more expensive pieces simply don't. The zesty chicken wing isn't a concession to people who don't want lamb. It's one of the best things on the table. We'd back it against anything.
