Our lamb chops spend 48 full hours in a marinade built from two food traditions, the spice depth of Indian cooking and the boldness of East African fire technique. By the time they reach your home, the flavour has worked its way to the bone. You can't rush that. We don't.

Cook them in-directly on coals, or in a medium heat oven. The outside chars. The inside stays tender. Everyone at the table goes quiet for a moment, and then asks for another one.

What makes these different

Most lamb chops are seasoned. Ours are transformed.

The marinade starts with whole spices, toasted, not powdered. Combined with yoghurt, citrus, and a herb blend that comes from decades of cooking in East African and Indian kitchens. Nothing from a jar. Nothing artificial. The 48-hour window isn't a marketing decision. It's the time needed for the flavour to fully penetrate the meat and for the natural tenderising process to do its work.

How to cook them

Gas grill: Medium heat, 4–5 minutes each side. Rest for 2 minutes before serving.

Open fire / coals: In-direct heat, 3–4 minutes each side to your liking. The fat will catch — that's the point. Rest for 2 minutes.

Preheat Oven: 180°C fan, 18–20 minutes, turning halfway. Finish under the grill for 2 minutes for char.

The Detail

  • Vacuum sealed. Stays fresh for 3 days refrigerated, or freeze on arrival for up to 3 months
  • No artificial ingredients, preservatives, or marinade pastes
  • Allergens: contains dairy and mustard. Karoga cannot guarantee an allergen-free environment.

A quick note

We don't call them 48-hour chops because it sounds good. We call them that because the time is the product. Take away the 48 hours and you have a different thing entirely. Something fine, but not this. The name is a promise about how seriously we take the craft, and a shorthand for everything Karoga stands for: food that takes time, because you're worth the wait.
