Paneer has a habit of disappearing at a feast. Polite, mild, the thing vegetarians get while everyone else has the lamb. That's not what this is.

Achari paneer tikka is built on a pickle-spiced marinade that refuses to be ignored. Achari, from the Hindi word for pickle, means the spice blend is built around the ingredients used in Indian pickling: fennel, nigella, mustard seed, dried chilli, and fenugreek. Together they create something deeply complex, slightly tangy, and bold enough to sit at the same table as 48-hour lamb chops and not feel like an afterthought.

Paneer cut just right, marinated overnight, and built to take the heat of a high grill. The edges char. The inside stays soft. This is the dish that converts the sceptics.

What makes these different

Most paneer tikka is marinated in a standard tandoori mix with paneer swapped in for the meat. That produces something pleasant but flat. The achari spice blend is a different starting point entirely. The complexity of the pickle spices means there's more happening in each bite, and the slight acidity brightens the richness of the paneer in a way that standard tandoori doesn't.

We cut the paneer just right, which matters. Thick pieces fail to carry flavour throughout. Our just right pieces give you a proper exterior char while keeping the inside creamy. We recommend adding peppers and onion to the portions, we provide more marinade to allow for this. They take the same heat and the achari marinade coats them beautifully.

How to cook them

Gas grill: High heat, 4–5 minutes each side.

Open fire / coals: Direct heat, 3–4 minutes each side, char to your desire.

Preheated Oven: 180°C fan, 18–20 minutes, turning halfway. Finish under the grill for 2 minutes for "a charring" (get it?).

Drizzle some melted butter, squeeze a touch of lemon, sand sprinkle with chopped coriander just to show off!

A note on the cheese

There is a version of vegetarian food that exists to accommodate people rather than to delight them. A slightly apologetic version, present on the menu so no one feels left out, but not really the point. We refuse to make that. The achari paneer tikka was developed with the same rigour as every meat cut in our range — the same attention to the spice blend, the same insistence on proper marination time, the same commitment to making something that stands entirely on its own merits. If you're vegetarian, you deserve the best thing on the table, not the least offensive alternative. If you're not, you should try this anyway. You'll be surprised what you've been overlooking.
