The vegetable samosa has a reputation it doesn't deserve. Too often it arrives as the lesser option. Present on the table for the people who don't eat meat, assembled without much conviction, and tasting exactly like that.

Ours are not those samosas.

The filling is built with the same care as every other item in the Karoga range. Perfectly spiced potatoes, peas, carrots and onions cooked down with spices, seasoned properly and given the time it takes to develop real depth. The pastry is thin and hand folded. The result is something that holds its own at any table, regardless of what else is on it.

These are the samosas that make meat eaters reach for the vegetarian option without thinking twice.

What makes these different

The filling is cooked twice. Once to develop the spice base, and again with the veg to bring everything together. This double-cook process is the step that most commercial samosa fillings skip. It means the spices are fully bloomed rather than raw, the potato has absorbed the seasoning rather than just being coated in it, and the whole filling has a cohesion that you can taste in every bite.

How to cook them

Defrost for 1 min each side in the microwave or until soft to the touch in the middle of each samosa. Don't overdo it!

Oven: 200°C fan, 18–20 minutes on a rack, turning halfway. Brush lightly with oil before cooking for an even golden colour. They should be deep golden and crisp on all sides.

Air fryer: 190°C, 10–12 minutes, turning once halfway. This is the method that gets closest to the texture of a freshly fried samosa.

(PREFERRED) Deep fry: 170°C oil, 4–5 minutes until golden and crisp. Drain on kitchen paper and rest for 2 minutes before serving.

The Detail

A note on the Queen of starters

We don't make a vegetable samosa because we need one on the menu. We make it because we wanted one we actually eat ourselves. The test we apply to everything in the Karoga range is simple. Would we be proud to serve this to the people we love? The vegetable samosa passed that test on the first try. It will pass yours too.
