There is the heat that arrives immediately and disappears just as fast, leaving nothing behind but the burn. And then there is the heat that builds slowly, layer by layer, and stays with you long after the last bite — warming from the inside, leaving the kind of lingering satisfaction that makes you reach back in before you've finished what's already in your hand.

The Mari Chicken is the second kind.

Built on a marinade of black pepper, white pepper, and green chilli balanced by yoghurt, fresh garlic, ginger, and lemon — with a touch of cheese that gives the coating a richness and a crust on the grill that is entirely its own. The pepper is the story here. Two kinds, used together, building a heat profile that is more complex and more sustained than either could produce alone. Black pepper brings warmth and depth. White pepper brings a sharper, more immediate heat that sits underneath it. Together they create something that is genuinely distinctive in the Karoga range.

What makes these different

The combination of black and white pepper is not a shortcut to heat — it is a considered spice decision rooted in a long tradition of pepper-forward cooking across South Asia and East Africa. Black pepper and white pepper come from the same plant but are processed differently, which gives them different flavour profiles beyond just heat level. Black pepper is earthy, woody, and aromatic. White pepper is sharper, cleaner, and more direct. Using both together creates a heat that has texture and dimension rather than simply being hot.

The yoghurt base does what it always does in a Karoga marinade — it tenderises the meat and creates a surface that chars beautifully under high heat. The garlic and ginger add the aromatic foundation. The fresh lemon brightens everything and stops the pepper from sitting too heavily.

The cheese is the unexpected element and the one that makes the difference. Blended into the marinade it adds a subtle richness to the coating and — more importantly — it creates a crust on the grill that seals the marinade against the meat and gives the exterior a texture unlike anything else in the range. Slightly crisp, deeply savoury, and speckled with the black of the pepper and the green of the chilli.

We marinate overnight. The pepper needs time to work into the meat rather than just coating the surface. By morning the flesh has taken on the full depth of the spice blend and the yoghurt has done its tenderising work. The grill does the rest.

How to cook them

Gas grill: Medium heat, 6 minutes each side.

Open fire / coals: In-direct heat, 5-6 minutes each side.

Preheat Oven: 180°C fan, 18–20 minutes, turning halfway. Finish under the medium grill for 2 minutes for char.

Sprinkle with coriander for added flare.

A note on pepper

Black pepper was once one of the most valuable commodities in the world. It was traded across continents, fought over, and used as currency — not because it was a simple seasoning but because it was genuinely transformative. Somewhere along the way it became the thing that sits next to the salt on every table, taken for granted, used without thinking. We use it differently. In the Mari Pepper Chicken, black and white pepper are the point — not the background, not the seasoning, but the entire flavour philosophy of the dish. This is a marinade that takes pepper seriously and asks you to do the same. We think once you've tried it, you'll understand why it was worth fighting over.
