Every great gathering needs something to start with. Something that arrives before the grill is even hot, that keeps people talking, that disappears before you've counted how many there were. That's what these are.

Cocktail lamb samosas, hand folded, generously filled, and built on a spiced lamb mixture that draws from the same flavour tradition as the rest of the Karoga range. The pastry is thin enough to shatter when you bite through it. The filling is dense, warmly spiced, and seasoned properly. The kind of samosa that reminds you what a samosa is supposed to taste like. No PEAS or veg in our meat Samosa's, you get only premium filling.

They work as a starter, as a side, as the thing that goes out while the main event is still cooking. They rarely make it to the table intact. Plan accordingly.

What makes these different

The filling is made from scratch. Lamb mince cooked with whole spices, fresh ginger, green chilli, coriander. No frozen filling, no pre-made mix.

Most importantly... NO PEAS, POTATOES OR FILLERS!

The pastry is folded by hand into the traditional triangular shape and sealed properly, which means the filling stays inside the samosa rather than escaping into the oil or the oven. We use a thinner pastry than most commercial samosas, which crisps faster and more evenly and gives you the shatter on the outside that is the mark of a properly made samosa.

How to cook them

Defrost for 1 min each side in the microwave or until soft to the touch in the middle of each samosa. Don't overdo it!

Oven: 200°C fan, 18–20 minutes on a rack, turning halfway. Brush lightly with oil before cooking for an even golden colour. They should be deep golden and crisp on all sides.

Air fryer: 190°C, 10–12 minutes, turning once halfway. This is the method that gets closest to the texture of a freshly fried samosa.

(PREFERRED) Deep fry: 170°C oil, 4–5 minutes until golden and crisp. Drain on kitchen paper and rest for 2 minutes before serving.

A note on the king of starters

A samosa done properly is not a lesser version of the main event. It is its own thing. A piece of craft that requires as much attention as anything else on the table, and that sets the tone for everything that follows. When the first thing people eat is genuinely good, it raises their expectation for everything else. We're comfortable with that pressure. These samosas are built to deliver on it.
