What makes these different

The marinade starts with a full spice blend — cumin, coriander, garam masala. Bloomed properly rather than mixed cold into yoghurt. We add a touch of mustard oil, which is the detail that most people miss. It sharpens everything. It's the difference between chicken tikka that tastes of spice and chicken tikka that tastes alive.

How to cook them

Gas grill: Medium heat, 6 minutes each side.

Open fire / coals: In-direct heat, 5-6 minutes each side.

Preheat Oven: 180°C fan, 18–20 minutes, turning halfway. Finish under the medium grill for 2 minutes for char.

Sprinkle with coriander for added flare.

A note on the standard

Chicken tikka is one of the most recognisable dishes in the world. That familiarity is both its greatest asset and its biggest problem, because most people have eaten a version of it so many times, in so many average forms, that they've stopped expecting it to be remarkable. It arrives, it's fine, they move on.

We think that's a shame. When chicken tikka is made properly – real spice, real time, real technique - it's genuinely extraordinary. Not exciting in a complicated way. Extraordinary in the way that something simple done exactly right always is. That's the standard we hold ourselves to with every batch. Not to reinvent it. Just to make sure it's as good as it should always have been.
